Belgian chips in Amsterdam. If we are to believe historian Jo Gerard, it all started in Belgium. He came to the conclusion that the first chips were baked in the valley of the Maas and based his conclusions on a family manuscript, which he discovered a few years ago. The manuscript dates from 1781 and is titled 'Curiosities from the Table in the Lowlands of Belgium'.
